lemon vinaigrette

lemon vinaigrette

a super duper excellent dressing for almost any salad.

lemon vinaigrette
  • 1 cup olive oil
  • 2 small lemons or 1 large lemon
  • ¼ cup balsamic vinegar
  • 1 teaspoon dijon mustard

step one: juice one half of your lemon(s) into small bowl
step two: pour olive oil, dijon mustard, and balsamic vinegar into bowl with lemon juice and mix together
step three: taste the vinaigrette and if necessary juice the other half of your your lemon(s).
step four: dress your salad using this vinaigrette and enjoy!

zucchini tartlets

these zucchini tartlets are gorgeous. who wouldn’t want to eat flower tarts for dinner. perfect for a summer evening, these zucchini tartlets will always have you wanting more.
zucchini tartlets (makes 12 tartlets)
  • 3 zucchinis
  • 2 small containers chavroux
  • 10 basil leaves
  • 2 spring onions
  • 2 sheets puff pastry (200g)
  • boiling water


step one: preheat oven to 350° and butter a muffin tin.


step two: chop basil and onions very finely.


step three: mix basil, onions, and goat cheese in a small bowl.


step four: cut pastry into six strips for each sheet of pastry.


step five: slice the zucchinis into very thin slices.


step six: spread cheese onto the top part of the pastry strips.


step seven: overlap the zucchini slices on top of the pastry strips but only on the top half of the pastry and fold the bottom half over.


step eight: slowly, roll the zucchini strips into a flower.


step nine: plop the roses into the muffin tin and bake for 20-25 minutes until the pastry is flaky.

step ten: place on a fancy plate and have a lovely time eating a flower!

we love...

do not worry! the we love… posts are not going away. even though the focuses of our blog are changing we decided to keep our weekly findings posts continued. so, without further ado, here is what we have loved this week:


  • this book is hilarious, tragic, and fun. it had us rolling with laughter and balling over the wonderful characters on their epic adventures. it is an essential read for this summer.
  • it is important to stay hydrated in summer and this water bottle helps you do it in style.  
  • this shirt is adorable
  • brand new by ben rector is a song that we have been listening to on repeat. it makes you feel bubbly and sets you in the right move for summer!
  • these cakes look, and taste, absolutely amazing
  • for chilling by the pool in style
  • this is great for helping you cool down!
  • rompers are an absolute must for summer

gazpacho


gazpacho: (serves six)
ingredients:
  • 1 pepper
  • 1 cucumber
  • 10 cherry tomatoes
  • ½ cup onion
  • 2 cloves of garlic
  • ¼ cup wine vinegar
  • ¼ cup olive oil
  • 3 cups tomato juice (spicy or not, it does not matter)
  • salt & pepper


step one: wash and chop pepper, tomatoes, and onion in one inch pieces.


step two: split cucumber in half lengthwise and scoop out the seeds. proceed to chop into one inch pieces.


step three: pulse all vegetables in a food processor and put in a large bowl.


step four: mince the garlic and add to the bowl


step five: add the wine vinegar and olive oil.


step six: stir in the tomato juice and salt & pepper to taste.


step seven: let the soup sit in the fridge for at least an hour.


step eight: serve chilled in bowls.


step nine: enjoy whilst thinking about the coast of italy because why not.

strawberry banana and blueberry smoothie

banana strawberry and blueberry smoothie
who said a delicious, refreshing drink had to be complicated?

ingredients:
  • ½ cup almond milk
  • 1 banana
  • 1 heaping cup frozen strawberries
  • ½ cup frozen blueberries
step one: blend all ingredients together
step two: pour into glass and enjoy!

chilled carrot soup

chilled carrot soup is a lovely lunch for summer. light and delicious, we will be eating this decadent dish at every lunch. it is pretty easy to make and totally worth it.




chilled carrot soup: (serves four)
ingredients:

  • 24 carrots
  • 4 cups water
  • ½  cup onion
  • 3 tablespoon ginger
  • ½ cup cream
  • mint garnish


step one: wash, peel, and chop carrots. chop onion and ginger as well.

step two: put two cups of water in large pot with the onion and the ginger.

step three: let pot sit cook on high for 40 minutes so that carrots can begin to soften.

step four: puree soup in a blender. add the cream after the mix is pureed.

step five: let soup chill for an hour and a half.

step six: put into bowls, garnish with mint, and enjoy!

ps. this dish is also really delicious served warm.

homemade mayonnaise

“mayonnaise: one of the the sauces which serve the french in a place of state religion.”

this homemade mayonnaise will replace all mayonnaises ever made. inspired by julia child’s recipe, our mayonnaise is light and delicious.
mayonnaise: (makes about 1 ½ cups)
ingredients:

  • 3 egg yolks
  • 1 teaspoon dijon mustard
  • juice of half a lemon
  • a pinch of salt
  • 1 - 1 ¼ cups olive oil
  • 2 tablespoons boiling water

step one: run a mixing bowl under hot water until warm. dry off.

step two: add egg yolks to mixing bowl and whisk like crazy for 1-2 minutes until egg yolks begin to thicken.

step three: stir in the lemon, mustard and salt.

step four: begin to add olive oil olive tablespoon by tablespoon. every 10 seconds, stop pouring and mix. you want to make sure that the yolks are absorbing the oil. after the first ½ of oil is absorbed, slower your pace and add the other ½ cups of oil.

step five: after the sauce thickens add the rest of the lemon juice and the rest of the oil.

step six: add the boiling water so the eggs do not curdle and stir.

step seven: to store, cover the mayonnaise closely to the surface so a film does not appear.

step eight: enjoy!

surprise!


cade is back in massachusetts and we decided that because of summer, and less distractions, we can restart the blog. the blog will be a summer project so when summer ends so will the blog. but, do not worry it will be back in a flash! we decided that because the best posts that we created were food related, we decided to focus this coast to that coast on food. now, we will share recipes we love and have created. bon appetit!
